Ingredients
Hummus base (homemade or store-bought)
- 150 g hummus (store-bought OR homemade)
If making it at home:
- 1 can chickpeas (240 g drained)
- 1 tbsp lemon juice
- 1 tsp olive oil
- 2–3 tbsp chickpea water (important for creamy texture)
- salt
- garlic powder or fresh garlic
Crispy chickpeas
- 1 can chickpeas (240 g drained)
- 1 tsp olive oil
- paprika
- garlic powder
- salt
Vegetables
- 1 bell pepper (sliced)
- ½ red onion
- optional: zucchini or cucumber
Toppings
- fresh parsley
- lemon juice
- chili flakes (optional)

Instructions
1. Prepare the hummus (optional but recommended)
If using store-bought hummus, skip this step.
If making it at home:
Add to a blender:
- chickpeas
- lemon juice
- olive oil
- chickpea water
- salt
- garlic
Blend until smooth and creamy.
Add more chickpea water gradually to adjust consistency.
Homemade hummus is usually lighter and fresher.
2. Prepare the chickpeas
Drain and rinse the chickpeas.
Don’t throw away all the liquid — you can use a bit in sauces if needed.
Pat them dry very well (important for crispiness).
3. Season
Add chickpeas to a bowl with:
- olive oil
- paprika
- garlic powder
- salt
Mix well.
4. Cook the chickpeas (Air Fryer version 🔥)
Place chickpeas in the air fryer basket.
Cook at 190°C for 12–15 minutes.
Shake halfway.
This is where the air fryer makes a BIG difference: super crispy texture.
I have and love this air fryer from Amazon.
If you don’t have one, you can just pop them in the oven.
5. Cook vegetables
Slice peppers and onion.
Air fry or pan cook for 8–10 minutes until slightly soft and lightly charred.
6. Prepare the bowl
Spread hummus on the base of a bowl (use the back of a spoon).
7. Assemble
Add:
- crispy chickpeas
- roasted vegetables
8. Finish
Top with:
- parsley
- lemon juice
- chili flakes
9. Serve
Serve immediately for best texture contrast (creamy + crispy).
