Instructions
1. Cook the pasta
Bring a pot of salted water to a boil and cook the pasta according to package instructions.
For a lighter version, avoid overcooking—it should stay slightly firm (al dente).
Once ready, drain and let it cool completely. This step is important to avoid a soggy salad.
2. Prepare the protein
If using chicken, grill or pan-cook it with salt, pepper, and a bit of garlic powder until fully cooked.
Let it rest for a few minutes, then slice it into bite-sized pieces.
For a vegetarian version, you can use tofu or chickpeas.
3. Prepare the dressing
Add all dressing ingredients into a jar.
Close tightly and shake well until smooth and creamy.
The consistency should be thick but pourable. If needed, add a splash of water to adjust.
4. Prepare the vegetables
Wash and chop the romaine lettuce into bite-sized pieces.
Keep it fresh and crisp—this is what gives the salad its signature texture.
5. Assemble the salad
In a large bowl, combine:
- cooled pasta
- lettuce
- chicken (or tofu)
Mix gently so the ingredients stay well distributed.
6. Add the dressing
Pour the dressing over the salad and mix well until everything is evenly coated.
Make sure every piece of pasta gets some dressing—this is key for flavor.
7. Finish and serve
Top with parmesan and a sprinkle of black pepper.
Serve immediately or refrigerate for 20–30 minutes for an even better flavor.
