Cucumber Feta Salad with Mustard Balsamic Dressing

Cucumber salads are one of the easiest and most refreshing dishes you can prepare, but adding a few simple ingredients can completely transform them.

This cucumber feta salad combines crisp cucumbers, creamy feta cheese, and a simple mustard balsamic dressing that brings everything together.

It’s fresh, slightly tangy, full of flavor, and perfect as a light lunch, a side dish, or a quick healthy meal.

The best part? You can make it in just a few minutes with ingredients you probably already have at home.

Ingredients

For this cucumber feta salad you’ll need:

• 2 large cucumbers
• 60 g feta cheese (crumbled)
• 1 tablespoon olive oil
• 1 teaspoon mustard
• half an onion
• 1 tablespoon balsamic vinegar
• 1 tablespoon water
• salt to taste
• black pepper
• optional: fresh herbs (parsley or dill)

This simple dressing adds a slightly tangy flavor that pairs perfectly with the freshness of the cucumbers and the creaminess of the feta.

How to Make the Salad

Step 1 — Slice the cucumbers

Wash the cucumbers and slice them thinly using a knife or mandoline. Thin slices work best because they absorb the dressing better.

Step 2 — Prepare the dressing

In a small bowl combine:

olive oil
mustard
balsamic vinegar
water
salt and pepper

Close the lid and mix everything together until the dressing is smooth and well combined.

Make the Dressing in Advance

If you enjoy making this salad often, one thing that makes it much easier is preparing the dressing in a larger batch.

I personally like to mix the mustard balsamic dressing in a jar so I can keep it in the fridge and use it throughout the week. This way the dressing is already ready whenever I want to make a quick salad.

Simply add your ingredients close the lid, and shake well until everything is fully combined.

Using a jar makes it very easy to mix the dressing evenly and also store extra portions for later.

I like using simple jars like these because they seal well and make shaking the dressing effortless

You can prepare several servings at once and just shake the jar before using it.

It’s a small trick, but it saves time and makes quick salads like this even easier during busy days.

Step 3 — Assemble the salad

Place the sliced cucumbers in a bowl, pour the dressing over them, and mix gently so the cucumbers are evenly coated.

Step 4 — Add the feta and the onion

Crumble the feta cheese on top and finish with fresh herbs if you like.

Serve immediately or let the salad sit for a few minutes so the flavors combine.

Tip: A Lighter Dressing Option

If you want a lighter version of this dressing, you can replace the olive oil with Greek yogurt.

Greek yogurt makes the dressing creamy, slightly tangy, and much lighter while still keeping the flavor rich and satisfying.

Simply mix:

Greek yogurt
mustard
balsamic vinegar
a little water
salt and pepper

Whisk everything together until smooth.

This small change can make a big difference if you enjoy using dressings often.

3 Habits That make Meals Lighter

Inside I share three simple habits that can help you adjust everyday meals in a smarter way.

Tips for the Best Cucumber Salad

Use fresh cucumbers
Firm cucumbers give the best crunch and texture.

Don’t skip the water in the dressing
It slightly lightens the vinaigrette and helps it coat the cucumbers evenly.

Add feta at the end
This keeps the texture creamy and prevents it from dissolving into the dressing.

Let the salad rest for a few minutes
This helps the cucumbers absorb the dressing and improves the flavor.

Variations

If you want to change the flavor slightly, you can easily customize this salad.

Add cherry tomatoes
They bring sweetness and extra freshness.

Add red onion
Thin slices add a little bite.

Add olives
Perfect for a Mediterranean-style cucumber salad.

Make it vegan
Simply remove the feta or replace it with a plant-based alternative.

Final Thoughts

Simple recipes are often the ones we come back to again and again.

This cucumber feta salad is refreshing, easy to prepare, and full of flavor thanks to the tangy mustard balsamic dressing.

It’s the kind of dish that works anytime — as a side, a quick lunch, or a fresh addition to any meal.
