Tools you’ll need

Ingredients

  • 1 can butter beans (240 g drained)
  • 1 cup cherry tomatoes
  • 1 cup cucumber
  • ¼ red onion (thinly sliced)
  • 2 tbsp fresh parsley

Optional (boost flavor & visuals)

  • olives or capers

Lemon Dressing (in a jar)

  • 2 tbsp lemon juice
  • 1 tsp olive oil
  • 2 tbsp water (or bean water for creamier texture)
  • 1 tsp honey or zero-calorie sweetener
  • salt & pepper

Instructions

1. Prepare the beans

Drain and rinse the butter beans.

Don’t throw away all the liquid — you can use a small amount for the dressing.

Pat the beans dry gently for better texture.

2. Chop the vegetables

  • halve the cherry tomatoes
  • dice the cucumber
  • thinly slice the red onion

Uniform cuts improve both texture and presentation.

3. Prepare the dressing in a jar

Add into a jar:

  • lemon juice
  • olive oil
  • water or bean liquid
  • sweetener
  • salt & pepper

Close tightly and shake until smooth and slightly creamy.

Using a jar makes mixing faster and allows you to store extra dressing easily.
Use jars like these.

4. Assemble the salad

In a large bowl, combine:

  • butter beans
  • tomatoes
  • cucumber
  • onion
  • parsley

5. Add dressing and mix

Pour the dressing over the salad.

Mix gently until everything is evenly coated.

6. Serve

Serve immediately for a fresh texture
or let it sit for a few minutes to enhance flavor.

Tips for the best result

  • slice onion very thin
  • don’t overdress
  • use fresh herbs
  • let it rest 5 minutes before serving

Make it lighter (lower calorie swaps)

  • reduce or skip olive oil
  • increase cucumber and herbs
  • use zero-calorie sweetener
  • add more vegetables for volume
