- Mixing bowl
- Glass jar for dressing
- Spoon
Ingredients
- 1 can butter beans (240 g drained)
- 1 cup cherry tomatoes
- 1 cup cucumber
- ¼ red onion (thinly sliced)
- 2 tbsp fresh parsley
Optional (boost flavor & visuals)
- olives or capers
Lemon Dressing (in a jar)
- 2 tbsp lemon juice
- 1 tsp olive oil
- 2 tbsp water (or bean water for creamier texture)
- 1 tsp honey or zero-calorie sweetener
- salt & pepper

Instructions
1. Prepare the beans
Drain and rinse the butter beans.
Don’t throw away all the liquid — you can use a small amount for the dressing.
Pat the beans dry gently for better texture.
2. Chop the vegetables
- halve the cherry tomatoes
- dice the cucumber
- thinly slice the red onion
Uniform cuts improve both texture and presentation.
3. Prepare the dressing in a jar
Add into a jar:
- lemon juice
- olive oil
- water or bean liquid
- sweetener
- salt & pepper
Close tightly and shake until smooth and slightly creamy.
Using a jar makes mixing faster and allows you to store extra dressing easily.
Use jars like these.

4. Assemble the salad
In a large bowl, combine:
- butter beans
- tomatoes
- cucumber
- onion
- parsley
5. Add dressing and mix
Pour the dressing over the salad.
Mix gently until everything is evenly coated.
6. Serve
Serve immediately for a fresh texture
or let it sit for a few minutes to enhance flavor.
